My my my, who knew that a quick little recipe would taste so good? Let me start from the beginning. It all started with Kelly Ripa. Yep it's all her fault.
Kelly had the lovely Chrissy Teigen as a guest on Live this week.
You know she's married to John Legend (love him).
Anyway, y'all that girl can cook! She has written a cookbook called Cravings. Now some of you might say she probably didn't actually write the book, and that she doesn't really cook, but I beg to differ! So...she made a Chicken Pot Pie soup on Live. It looked yummy but it also looked really rich and fattening. I loved the idea. And... y'all those crust crackers though!!! I knew I needed to figure out a way to make the crackers and also come up with a quicker and easier soup then the one Chrissy made. Wouldn't you know it....my girl Marissa @instantpotlove posted a Chicken Pot Pie recipe that very day on her Insta feed??
What? I knew I wanted to use my Instant Pot, but I didn't want an actual Chicken Pot Pie but a soup recipe. So...I experimented and married Chrissy's soup recipe to @instantpotlove's pot pie recipe and voila...Chicken Pot Pie Soup with Crust Crackers. Let me tell you...it is a marriage made in Instant Pot Heaven! My hubby gave it a thumbs up! You can crush, break, or dip the crusts in the soup and it gives you the feeling of a pot pie only BETTER! They are made from a refrigerated pre-made dough that i cut with a pizza cutter! How cool and fun is that?? You can follow Marissa @instantpotlove here.
